I am making an appetizer for dinner today that I saw Paula Dean make the other day on the food channel.
The recipe uses puff pastry and should be cooked on parchment paper, and of course, I am out of it. Is there a substitute I can use? I am assuming the wax on wax paper would melt.

Grease cookie sheets only if you want the cookies to spread or the recipe calls for it. If you don't want your cookies to spread or they are difficult to remove from a baking pan, line the pans with parchment paper. Parchment is coated on both sides with silicone, which prevent cookies from sticking. Don't use wax paper as a cookie sheet liner, since its exposed surfaces can smoke and burn. If you don't have parchment paper, greased aluminum foil works second best.

I had the opportunity to meet Paula Deen a few months ago and eat at her restaurant in Savannah. She quite a woman. She learned to cook so well because she was agoraphobic for 20 years and rarely left her house. Her food is great but it's not exactly health food. I especially like her cheese biscuits and hoe cakes. Tom.

Karen, I suggest you invest in a couple of sheets of Silpat, which are permanent non-stick liners for your cookie sheets. I really love mine. You just wash and dry them after each use. They withstand very high temperatures. When I make candy at Christmas I pour the molten syrups right on the Silpat to cool. ![[Linked Image]](http://www.chefsboutique.com/silpat/fullbig.jpg)

Heck, I just buy rolls of parchment paper, like foil or waxed paper. Use it, toss it.

Marsha, I made these and they were very yummy! I just followed Joanna's advice and sprayed the cookie sheet with Pam. I had one of those silcon things and if I remember correctly, Mark cut a pizza on it :rolleyes:

Silpat, is there anything one cannot learn on this board? Marsha, where do you buy them? I almost never think to buy parchment paper....hardly ever cook, but it would be nice to have them on hand.
Karen, you are quite an adventurous cook if that was an appetizer just for the two of you. What was the rest of the menu?

Olivia we also had jerk pork, fresh sliced tomotoes, basil, olive oil and vidalia onions and of course, more corn on the cob :) The corn was called "ambrosia" and was the first time I had that variety, it was very good! Is it clear that I like corn on the cob yet, as that's all I have been eating for 2 weeks now?!?!

I have been eating tomatoes for the past week because my neighbor left a box of them at my door last week! BLT's, Burgers with tomatoes, tomato stuffed with tuna salad, you name it. Anything SIMPLE. I normally do corn when I have company for my summer porch crab feasts. But right now, my kitchen floor is torn up waiting to be replaced because I had a flood incident in late spring that has left me without a kitchen floor for the summer. Tomorrow I go to Assageague Nat. Seashore for my off-road jaunt with my dear SIL and another girlfriend. We will have a grill, hot dogs, etc, and maybe we should stop at the produce stand and get some corn! I will see if they have "ambrosia", if it is white, my favorite sweet corn. I have not had my corn fix this summer!

Salsa is VERY easy
Chop tomatoes with chopped onion (purple is nice!) Chop some Cilantro Chop a chili (Habnero?) refrigerate and enjoy!
Serve with Chips or over eggs or over fish or chicken Can also subsitute the tomatoes for Papaya or Mango or even watermelon or mix it up

p.s. mango and papaya salsas are great.. I use both actually, so it's mango, papaya, red onion, red pepper, serrano chile pepper, avocado, evoo, s and p and a dash of rice wine vinegar.. delicious on halibut and swordfish and chicken breast

For all you chicken lovers out there!! Good FUNKy Chicken Recipe
Here is a chicken recipe that also includes the use of popcorn as a stuffing - imagine that! When I found this recipe, I thought it was perfect for people like me, who just are not sure how to tell when poultry is thoroughly cooked, but not dried out. Give this a try.
BAKED STUFFED CHICKEN 6-7 lb. baking chicken 1 cup melted butter 1 cup stuffing (Pepperidge Farm is good.) 1 cup uncooked popcorn (ORVILLE REDENBACHERS LOW FAT) Salt/pepper to taste ______________________________ Preheat oven to 350 degrees. Brush chicken well with melted butter, salt, and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds.
When the chicken's butt blows the oven door open and the chicken flies across the room, it is done.

Marcie (and Joanna), from La Cucina Italiana Sept. issue: Has Sambuca in it, thought you might like it! Actually Sambuca cream (??)
Banana Bliss
In a blender, combine 1/4 cup of Sambuca cream, 2 Tbls. of Rum, 1/4 cup of fresh cream, 1/2 of a banana and 1/4 cup of crushed ice. Pulse until smooth and creamy. Pour into a tall glass, garnish w/slice of banana.
Sounds like dessert!!
