There's an article in today's NYT about photo editing on the iPad. Frankly, I've gone to using a MacBook Air when we travel because among other things my first-generation iPad can't use iPhoto. But for those who use the iPad as their primary hardware on cruises, this might be of particular interest. See iPad Photo Editing.

I do most of my photo editing on my iPad (unless I'm looking to print something out large, then I use Lightroom) and the apps I use most are Snapseed and photogene. Both Snapseed and Photogene can handle RAW (which is how I shoot). I just don't like iPhoto. I have an iPad2 64GB and it has worked out very well for me on many trips.
