Spinach Balls

Beat: 4 large eggs
Add: 2 10 ounce boxes chopped spinach, cooked, drained & squeezed
1/4 c. chopped onion, sautéed
3/4 c. grated parmesan cheese
5/8 c. vegetable oil
1/2 teaspoon thyme
1/4 teaspoon pepper
1/4 teaspoon nutmeg
Add: 2 1/2 c. herb stuffing mix
Let mixture stand for 20 minutes.
Shape into balls (about 24 ping pong ball size).
Place balls on jelly roll pan (need the sides for runoff) sprayed with cooking spray.
Bake at 350 degrees for 30 minutes or until hot and lightly browned.

You may prepare these ahead and cool, wrap & freeze. Reheat thawed spinach balls 10-15 minutes at 350 degrees.
Kathy.. that sounds fabulous...yum
