Lots of requests for Clay's Corn dish, so here are the details

4 cans Shoe Peg corn
8 – 12 large Jalapeños
1 8 oz Philadelphia Cream Cheese
1 stick of butter
Mild Cheddar Cheese Grated
Milk
Salt and pepper

Very easy…except the Jap prep…

Clean the Japs and remove all the seeds and veins. Dice them up in the size of a corn kernel..

Open the cans of corn and drain off all the water. Mix the japs with the corn in large mixing bowl…add a bit of Grated cheese salt and pepper now.

Add Cream Cheese and butter to casserole dish and melt in Oven at 350 degrees. The cream cheese will not melt but the butter will and the cheese will soften.

Mix the butter, Cream cheese, and a bit of milk.. now add this nice mixture to the Corn, Japs and Grated cheese…Mix well and return to casserole dish…

Heat the entire mixture at 350 degrees for about 30 to 45 min until it starts to bubble. Remove from oven and add a bit of grated cheese on top…

All done..

Not healthy for sure but very tasty..
