Dubrovnik is one of my very very favorite ports. I've been there 3 times and enjoyed it each time. As Ted said it is a very easy city to do on your own.... unless you want lots of "guide talk." Each time we've been there we have just walked around, into the cathedrals and through the streets and of course the wall. The wall is quite a long walk if you do it in its entirity, but has such beautiful views of the city and the ocean. If I remember correctly about halfway through there is s place where you can go back down and not walk the entire wall. I think it has become a bit more touristy over the years but it still retains its charm. If you are on Regent they have tours that go up into the hills around the city, but I've never done that as I just so much enjoy the city itself. Also, when you are sailing in, remember to be up on deck and looking to the right towards the countryside for the "welcome" the Nuns will give the ship. Very special.
